As a teenager, Emilio spent summers and weekends working at the restaurants of his uncle Juan and Carlos Hernandez, where he found a passion for Tex-Mex food. The menu he created comes from generations of family cooking. From the Hamburger recipe created by his grandmother Chata, which she used to run a street burger stand in Mexico City to support her ten kids, to the Margarita recipe made by his uncle Daniel Hernandez. This menu is a testament to a family who has always been brought together by food. We hope you enjoy our Cowboy Tex-Mex style, and we hope we become part of your family with our food.

Meet Susanita

Adriana Hernandez

Our family restaurant is named after "the name that never was." Most Tex-Mex spots are named after a beloved grandmother, the owner, or a small town in Mexico—but ours is a little different.

Adriana Hernandez, the heart behind our restaurant, was almost named Susana at birth. It was her grandmother Guadalupe's wish. But Adriana's father insisted she be named after her mother instead. In a quiet act of rebellion, Grandma Guadalupe lovingly called her "Susanita" anyway—and the nickname stuck.

As the youngest of her siblings, Adriana naturally became the center of family life. That same spirit lives on in our restaurant. We chose the name Susanita to honor that nickname, that story, and that sense of warmth. When you walk through our doors, we hope you feel like family too.
